Meat, Fish, and Mushroom Skewers

A quick and healthy skewers recipe, perfect for barbecue season. Ready to eat in less than an hour, these skewers are simple and delicious! Inspired by the multitude of various skewers from Zelda Breath of the Wild and Tears of the Kingdom.

Skewers are one of those things in Zelda Breath of the Wild and Tears of the Kingdom that are super easy to cook, plus they are also not hard to customize. Skewers can be cooked at any cooking pot quite early into the game, making them an almost essential meal for any casual play. Let’s break the skewers down by type.

Meat skewers in Zelda Breath of the Wild and Tears of the Kingdom: any piece of meat or chicken

Meat skewers are made by cooking any meat or chicken cuts in a cooking pot. Meat can be gathered from just about any larger wild animals, such as bears, wolves, birds, and deer. I can never bring myself to shoot the little foxes because they are so cute, but yes, they also give meat. Cooking several different types of meat together will render copious meat skewers.

Fish skewers are equally simply, just cook any fish in a cooking pot! As with the other skewers, you can also cook several different types of fish together to acquire copious fish skewers, and a higher heart count for your meal. Fish can be found in almost every body of water in Hyrule – ponds, lakes, rivers, and the ocean. If you’re lucky, they can also be a drop from octoroks.

Mushroom skewers in Zelda Breath of the Wild and Tears of the Kingdom: any mushroom

Mushrooms of all types can be used for mushroom skewers, as long as you use at least one mushroom. Using several different mushrooms will give copious mushroom skewers.

Combo Skewers

Combo skewers, such as meat and mushroom, or fish and mushroom, can be made by combining at least one of each ingredient, then cooking them in a cooking pot.

Elemental Skewers

Basic skewers fish or mushroom skewers can further be adjusted to have elemental properties, depending on the type of fish or mushroom used. Meat skewers can be made with elemental properties by adding elemental ingredients, like swift violets or silent princess flowers -or sundelions!

Hearty Skewers

You can also drastically increase the heart count of a meat or fish skewer by cooking the meat or fish with a hearty durian. You can also just cook up a hearty salmon for a hearty fish skewer. For a hearty mushroom skewer, cook up a truffle!

General heart counts can be increased in the main skewer varieties (just meat, just fish, or just mushrooms, but no combo skewers!) by adding korok fronds, chickaloo nuts, Hyrule herb, hazelnuts, etc.

Just don’t add apples to mushrooms or you’ll get fruit and mushroom mix instead of a skewer! Also if you cook fish, mushrooms and say… spicy peppers together, you’ll get peppered fish instead of a skewer, hence why I don’t recommend trying to add extra ingredients to any combo skewer recipe for the most part.

Meat, Fish and Mushroom Skewers

These simple skewer recipe makes 4 servings of each type of skewer. Ready in 2 hours or less including the marination time, these skewers are perfect for a summer party or any meal during barbecue season!

Prep: 30 minutes

Marination: 1-2 hours

Grilling: 10 minutes

Ingredients

Meat Skewers

  • 1 lb (450 grams) boneless pork – e.g. tenderloin, cut in 1-inch cubes

Meat Marinade:

  • 2 tbsp oil
  • 2 tbsp grated ginger
  • 2 tbsp minced garlic
  • 1 tbsp orange zest
  • 2 tbsp orange juice
  • 1 tsp ground cinnamon
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp paprika
  • Salt and pepper, to taste

Fish Skewers

  • 1 lb (450 grams) white fish – e.g. mahi-mahi fillets, cut in 1-inch cubes

Fish Marinade:

  • 2 tsp oil
  • 1 tsp lime zest
  • 1 tbsp lime juice
  • Salt and pepper, to taste

Mushroom Skewers

  • 1 lb assorted mushrooms – Choose your favourites! I used Cremini, Shiitake, and Oyster mushrooms
  • 2 tsp oil
  • Salt and pepper, to taste

Tools

  • bowls or containers for marinating the meat or fish
  • cutting board
  • knives
  • garlic mincer
  • grater/zester
  • hand juicer (or a fork)
  • bamboo or metal skewers
  • measuring spoons
  • mixing spoons
  • barbecue tongs

Instructions

1. Mix together the marinades for the meat and the fish in separate containers.

Slice the meat and fish into cubes, then cover them fully in their respective marinades. Cover and chill in the fridge for one hour.

Note: You can marinate the pork overnight for a stronger flavour, however don’t do this with the fish – it will turn mushy. The mushrooms don’t require any marinade either.

2. Soak the bamboo skewer sticks in water.

Soak the skewer sticks for at least 30 minutes before using to prevent them from burning on the grill. If using metal skewers you can skip this step.

3. Preheat the grill to medium-high heat.

Medium high heat on a barbecue is usually 375-450°F (190-230°C), or when the coals of a charcoal grill glow red with a light layer of ash. 

4. Season the mushrooms just before grilling.

Toss the mushrooms in a bowl with the oil, salt and pepper. Do this right before grilling to avoid slimy shrooms! No marination needed.

5. Thread the marinated meat, fish, or mushrooms onto the skewers.

You can make skewers of just meat, just fish or just mushrooms.

You could also create combo skewers with a mix of ingredients – meat and mushroom skewers, meat and fish skewers, or skewers with a variety of mushrooms.

6. Grill the skewers.

Cook them for 2 minutes per side, rotating every 2 minutes or until the meat or fish is cooked through, or the mushrooms are tender, about  6-8 minutes in total. For most meats, the internal temperature should be at least 145°F (63°C). For fish, the internal temperature should reach at least 145°F (63°C).

7. Serve and enjoy.

Use tongs to remove the skewers from the grill and transfer them to a serving platter. Turn off the grill and enjoy your skewers!

Tasty Grilled Skewers

We served these delicious skewers with some rice and a green salad. You could also make a wide number of variations on these skewers by switching up the ingredients. Try making chicken skewers with cubed breast or thigh meat, or make some tofu skewers! You could also use prawns or crab meat instead of fish for an entirely different flavour of seafood.

Secret For Super Tender Meat: Baking Soda!

Also a note about cooking with pork: If you want super tender pork, try tossing your pork pieces with a few tablespoons of baking soda first! Let the pork sit in the baking soda mixture for about 15 minutes, then rinse the meat off and proceed with your usual seasonings and cooking instructions.

You can also submerge the meat in the same amount of baking soda mixed with several cups of water if preferred, but I’ve found that for me personally the difference between soaking the meat in baking soda water versus just tossing the meat with baking soda is negligible. Either way, using baking soda will make your meat much more tender.
