These fries are so delicious and crispy, they are a comfort food I always come back to. My love of potatoes wasn’t always so clear though. In fact, I grew up absolutely despising potatoes. To me, they were a starchy, dry, tasteless and only slightly tolerable if drowned in a vat of oil and served with ketchup.
When I first met my partner (him being German) I learned a lot about cooking potatoes. Seeing the way his face lit up when we ate potatoes changed my mind about spuds. I decided to try out different ways of preparing potatoes to see if I could not hate them, and I succeeded.
This is one of my favourite recipes now, and we make them all the time! So, I’m dedicating this very simple recipe to my partner, who taught me to love potatoes.
Tips and Tricks for Perfect Fries
Potatoes come in a wide range of colours and shapes beyond the typical brown-skinned and white-fleshed everyday type. From red and purple to fingerling and russet, each type offers unique flavours and textures.
What Type of Potatoes?
For potato fries, choose a more starchy variety like russet potatoes, if possible. Their high starch content promotes that sought-after crispiness. Of course, the best potatoes are the ones you have on hand. I have Yukon Gold potatoes from the garden, so that’s the type of potato I end up using for just about everything.
Soak Your Potatoes In Ice Water
Make sure to slice the potatoes into uniform sticks or wedges to assure even cooking. Soaking the cut potatoes in ice water for 10-30 minutes before baking can also help to remove some of the excess starch and make sure your baked fries are extra crispy – just make sure to pat the soaked potatoes dry before seasoning and baking.
Bake The Fries In A Hot Oven
For great fries, a moderately hot oven temperature of at least 400˚F is recommended. This ensures the fries have a crispy exterior while retaining a tender inside. Toss the fries part-way through the baking time for even browning. On barbecues, grill your fries over medium-high heat until crispy (for about 15-20 minutes).
Add Some Oil – But Not Too Much!
A light drizzle of avocado oil, canola oil, or liquid coconut oil provides the perfect amount of fat for making the fries crispy. Avoid using too much excess oil, as it can render soggy fries.
Spread The Fries Out For Even Baking
Make sure to also spread the potato sticks evenly in the roasting pan or baking sheet – they need to have enough space to breathe! Crowding the sheet can result in uneven cooking and less crispy fries.

Crispy Roasted Potato Fries
Delicious homemade fries, ready in just one hour. This recipe makes about 4 servings.
Ingredients
- 4 medium-large potatoes (about a cups’ worth per potato)
- 4 tbsp avocado oil, canola oil, or liquid coconut oil
- 1 tsp herbes de Provence
- 1 tsp dried rosemary
- 1 tsp dried parsley
- 1 tsp salt
- ½ tsp ground pepper
Tools
- roasting pan, grill pan or baking sheet
- large bowl filled with ice cubes and water
- knife
- peeler
- cutting board
- paper towel or tea towel
- spoon
- oven mitts
- trivet or cooling rack
- oven-safe baking parchment (optional)
Instructions
- Peel the potatoes, then slice them into sticks or wedges.
- Put the potato sticks into ice water for at least 10 minutes, then rinse them and pat them dry.
- Preheat the oven to 400˚F.
- Spread the potato sticks out on the baking sheet and drizzle with oil.
- Sprinkle the potatoes with the seasonings, then toss well. Spread all the sticks out evenly on the baking sheet.
- Bake at 400˚F for 40 minutes, until cooked and crispy. Halfway through the baking time, toss the fries again and drizzle them with more oil if necessary.
Roasted Or Barbecued Perfect French Fries
If you want to barbecue your fries just cook them in a grill pan for 15-20 minutes over medium-high heat. Make sure to toss the fries every few minutes, so they cook evenly. Barbecued potato fries are so good!
Baked or grilled, these potato fries also taste great with aoli or ketchup, or just on their own for those who don’t like mayo-based dips. For a truly delicious experience, pair them with some cheesy baked fish and creamy lemon herb dip.
