These delicious carrots are so perfect for fall – orange, bright, sunny, and flavourful. They’re easy to whip up in less than an hour while cooking the rest of your dinner – just throw them in the oven and let them roast away! The parmesan cheese isn’t necessary, but it does add that extra pop of flavour to the carrots, as does a side serving of some creamy lemon herb dip.

It’s a similar story for their inspiration from Stardew Valley – the roots platter! A relatively easy dish to make in Stardew Valley, as soon as you can get your hands on some cave carrots and winter roots.
Roots Platter from Stardew Valley: Cave Carrot + Winter Root
To make the roots platter, simply combine a cave carrot and winter root – it’s as easy as that. Of course, you’ll need your farmhouse kitchen upgrade, or at least the cookout kit. If you’re lucky, you can also purchase this from Krobus’s shop on the occasional Saturday, but you might want to get the pink cake from him instead!
You can, as with most foods in Stardew Valley, use the roots platter for tailoring with Emily’s magic sewing machine. Simply add a roots platter to make a cute blue shirt with some red suspender straps.
Also if you want to get in Penny’s good books, give her a roots platter as a gift – she’ll absolutely love it! But whatever you do, don’t give the roots platter to Krobis, Willy, or Leo – they’ll never forgive for it. Why do these three guys all seem to hate the same gifts, hmm? Now, onto the recipe!

Roasted Carrots With Parmesan
This delicious roasted carrot recipe makes about 4 servings. It’s ready from start to finish in less than 1 hour. Serve them with fresh herbs or this creamy lemon herb dip!
Ingredients
- 1 lb of fresh carrots – garden fresh, carrots with the tops, or bulk carrots, your choice!
- 2-3 tsp olive oil or avocado oil
- ¼ cup freshly minced garlic
- ¼ cup freshly grated parmesan or asiago cheese
- salt and pepper, to taste
- optional: fresh herbs to garnish – parsley, rosemary, thyme, etc.

Tools
- knife
- vegetable peeler
- roasting pan
- garlic mincer
- cheese grater
- oven mitts
Instructions
- Preheat the oven to 400˚F.
- Remove the green leafy tops from the carrots, if still attached.
- Wash and peel the carrots.
- Rub a little olive oil in the bottom of the roasting pan, then add the carrots to the pan.
- Drizzle 1 tsp olive oil over the carrots, then top them with salt and pepper.
- Roast the carrots for 30 minutes at 400˚F.
- Pull the pan of carrots out and rotate them. Add the remaining teaspoon of olive oil, the minced garlic, grated cheese and more salt and pepper.
- Roast the carrots for another 10 minutes at 400˚F.
- Serve the carrots topped with more grated cheese, freshly ground pepper and a side of creamy lemon herb dip or some fresh herbs.

Aromatic Roasted Root Veggies
These roasted carrots are just delightful, and so easy to make with minimal effort. This recipe is for oven-roasted carrots, although you could also easily cook them on the barbecue in about 20 minutes over medium-high heat. Pair them with some fresh corn and grilled meat, chicken or fish for a well-balanced easy dinner.
You could also add different herbs or seasonings to the carrots before roasting to get lots of different flavours.
Try adding some Goron spice mix! You could also add lots more garlic, fresh grated ginger, fresh rosemary and thyme, or even drizzle them with chilli oil after cooking. Lots of options here!
If possible, try to get fresh garden carrots for this recipe, either straight from the garden, or the ones at the grocery store with the green tops still attached. The flavour will be extra amazing!
