Sweet roasted strawberries with cinnamon and maple syrup. This jammy strawberry recipe is easy to whip up in just 40 minutes. Gently roasted until caramelized, these strawberries can be served with pancakes, french toast, oatmeal, on toast – or even with roasted meat or charcuterie in a more savoury setting. Including additional recipes for strawberry vinaigrette and strawberry meat marinade!

These roasted strawberries are absolutely scrumptious! The best part is they are super easy to make, and they keep well in the fridge for up to a week, or in the freezer for a couple months. You can even freeze the roasted strawberries ice cube trays and then store the frozen strawberry cubes in a container in the freezer for easy access anytime.

Fresh or Frozen Strawberries

While strawberries are generally in season during spring and early summer, depending on your location, you can usually find some in the store any time of the year. Frozen strawberries also work really well for this recipe – just defrost them and drain out the water first. 

Which Pan To Use?

There are two different results you can get from roasted strawberries, depending on your choice of pan. If you space the strawberries out on a large baking sheet, more moisture will be absorbed from the strawberries and they become more caramelized. 

By comparison, if you would prefer more jammy roasted strawberries that you can use as a spread on toast or mix into a cake batter, try roasting them in a smaller baking dish. They will retain more liquid, but due to the roasting process this liquid is a bit thicker once cooler and has a very strong strawberry flavour.

Recipe Customizations

You can also easily customize the flavour of the strawberries depending on how you season them. I’ve used cinnamon, maple syrup and vanilla, however you could change this up depending on the different sweeteners and herbs and spices you choose. The addition of liqueur to the strawberries is also optional, of course.

Here are just a few ideas for changing up this recipe:

  • Swap the maple syrup for honey.
  • Add different spices instead of cinnamon, like nutmeg, or cardamom.
  • Try roasting them with some olive oil, balsamic vinegar and black pepper. This is divine with roasted meat or salads!
  • Add grated lemon or orange zest, then drizzle the raw strawberries with a mixture of the citrus juice and brown sugar before roasting.
  • Try serving the roasted strawberries with different fresh herbs – mint, thyme or basil would work beautifully.
  • Mix the cooled roasted strawberries with fresh watermelon chunks and crumbled feta, then serve with freshly chopped mint.
  • Roast the strawberries with olive oil and balsamic vinegar, then serve them with freshly sliced heirloom tomatoes, fresh basil, and lots of salt and pepper.

Jammy Roasted Strawberry Uses & Combinations

When roasted, the heat from the oven caramelizes the natural sugars in the strawberries, intensifying their sweetness and evaporating a lot of the excess liquid in the fruit, concentrating their juice. The roasted strawberries take on a syrup-like jammy consistency that pairs beautifully with a large variety of recipes and dishes. Their texture becomes softer, making them suitable for spreads and sauces too.

These roasted strawberries can be served with sweet dishes like french toast, pancakes, oatmeal, or even spread over slices of toast. Roasted strawberries would also work wonderfully as part of a dessert-style pizza or flatbread, or mixed into homemade ice cream.

You could also serve these strawberries in a more savoury setting, with roasted meat, rice pilaf, mixed into a salad, or even as part of a charcuterie board with sliced meats and cheeses.

Here are two simple roasted strawberry recipe applications, to get your creative cooking juices flowing:

Simple Strawberry Vinaigrette

Simply mix all the ingredients together and toss with your salad of choice!

  • 1/2 cup roasted strawberries (cooled)
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • salt and pepper, to taste

Roasted Strawberry Meat Marinade

Marinade the meat for 4-6 hours in the fridge, then cook the meat with the marinade in a frying pan until fully cooked and all the liquid is reduced.

  • 1/2 cup roasted strawberries (cooled)
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tbsp garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • handful fresh herbs, chopped – thyme, rosemary or parsley
  • salt and pepper, to taste
  • meat of your choice (lamb, pork, beef, etc.)

The possibilities for using roasted strawberries are literally endless. Now, onto the main recipe!

Roasted Strawberries

These scrumptious roasted strawberries are ready in just 40 minutes. This recipe makes about 2 cups of roasted strawberries.

Ingredients

  • 4 cups (2 lbs) fresh strawberries
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • ¼ – ½ tsp cinnamon
  • pinch of sea salt
  • optional: 1-2 tsp liqueur – amaretto, orange, raspberry or almond flavours would work well for this recipe

  • baking parchment
  • oven mitts
  • mixing bowl
  • mixing spoon
  • measuring cups
  • measuring spoons
  • knife
  • cutting board

Instructions

  1. Preheat the oven to 350˚F.
  2. Rinse and pat dry the strawberries. 
  3. Remove the leaves and stems, then slice all the strawberries.
  4. Line a baking sheet with baking parchment, then add the sliced strawberries.
  5. In a small bowl, mix together the maple syrup and vanilla. Drizzle it evenly over the sliced strawberries.
  6. Sprinkle the strawberries with cinnamon and salt.
  7. Roast the strawberries at 350˚F for 25-30 minutes, until tender. Stir the sliced strawberries halfway through the baking time for more even baking.
  8. Once cooked to your desired likeness, remove the strawberries from the oven. Drizzle with 1-2 teaspoons of liqueur if desired.
  9. Serve the warm roasted strawberries right away, or let them cool and then transfer them to an airtight container. Roasted strawberries keep well in the fridge for about 5 days or in the freezer for 1-2 months. Freeze them in an ice cube tray, then transfer the frozen cubes to a freezer-safe Ziploc bag for easy freezer storage access.

Versatile Roasted Strawberries

Roasting strawberries is a delicious and easy way to intensify and elevate the natural flavour of strawberries, and you can really make these any time of the year.

Drizzled with maple syrup and baked in the oven, their sweetness is brought forth and they take on a slightly caramelized texture.
